Salmon steaks seared on a wood fire

Ingredients (for 4 people):

4 salmon steaks
Salt, pepper, red peppercorns
Chives, olive oil
Lemon

 

Cooking in a Le Panyol wood-fired oven

Type of cooking: with embers, open oven

  • Heat the oven to 350 - 450°C
  • Push the embers to the back.
  • Clean the hearth with a brush.
  • Place the salmon steaks directly on the hearth with their skins facing downwards. No need for a metal grill.
  • Do not close the door.
  • Leave for as long as it takes to cook the salmon to your taste.
  • N.B. cooking is very fast in a Le Panyol wood-fired oven at this temperature.
  • Remove the salmon steaks (using a small shovel) and season to taste: salt, pepper, chopped chives, red peppercorns.
