Ingredients (for 4 people):
4 salmon steaks
Salt, pepper, red peppercorns
Chives, olive oil
Lemon
Cooking in a Le Panyol wood-fired oven
Type of cooking: with embers, open oven
- Heat the oven to 350 - 450°C
- Push the embers to the back.
- Clean the hearth with a brush.
- Place the salmon steaks directly on the hearth with their skins facing downwards. No need for a metal grill.
- Do not close the door.
- Leave for as long as it takes to cook the salmon to your taste.
- N.B. cooking is very fast in a Le Panyol wood-fired oven at this temperature.
- Remove the salmon steaks (using a small shovel) and season to taste: salt, pepper, chopped chives, red peppercorns.
