Fish

Not enough people know this, but our ovens are particularly good for fish cookery. With the intense heat inside, the skin will turn golden and crisp while the flesh will remain tender, moist and full of flavour. Some fish with thick skin can be placed directly on the hearth, while more delicate fish are better protected in dishes or casseroles. You can also smoke fish effectively. Try playing around with different woods to achieve different flavour profiles.
