Drying fruit and vegetables

Your Le Panyol oven may be great for baking and savoury dishes, but don’t miss out on the pleasure of drying your own fruit and vegetables. Right at the end of the cooking cycle, when the temperature drops to around 60°, put your fruit, vegetables and herbs in the oven. They’ll dry gently over a few hours. This is the way to ensure that you preserve all their flavour and nutrition.
