Heating with "gueulard"

 

Instead of making fire into the cooking chamber, the fireplace is installed under or beside the cooking chamber.

The flame gets through the cooking chamber thanks to a mouth (named "gueulard") between the fireplace and the oven.

This installation avoids taking off the embers at each heating

 

This heating allows the appellation "Cooked over a wood fire".
